
Lasagna Soup
Ingredients
- 1 lb Italian Sausage (Mild or Hot)
- 1 lb Ground Beef
- 1/2 Yellow Onion – Diced
- 1 tsp Italian Seasoning
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- Black Pepper to taste
- 24 oz Pasta Sauce
- 5 cups Chicken Broth
- 1/2 cup Ricotta Cheese
- 10 Lasagna Sheets, broken into pieces
- 1 cup Mozzarella Cheese, shredded
Directions
- In a large pot brown sausage, beef, and onion. Drain excess grease
- Add seasonings
- Add Pasta Sauce and Chicken Broth. Stir. Bring to gentle boil.
- Add broken Lasagna Noodles. Cook until tender, stirring occasionally
- Stir in Ricotta Cheese. Simmer until fully incorporated & creamy.
- Ladle into bowls, topping with shredded Mozzarella Cheese
Notes:
- Add more seasonings (all) – you cannot over season
- Add a little bit of salt. There’s not enough in the Pasta Sauce or Broth. But you don’t need a ton.
- I used Rao sauce, which tasted pretty fresh
- Preparing ahead of time and letting sit helps the flavors come together
- Serve with Garlic Bread 😋
