Lasagna Soup

Ingredients

  • 1 lb Italian Sausage (Mild or Hot)
  • 1 lb Ground Beef
  • 1/2 Yellow Onion – Diced
  • 1 tsp Italian Seasoning
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • Black Pepper to taste
  • 24 oz Pasta Sauce
  • 5 cups Chicken Broth
  • 1/2 cup Ricotta Cheese
  • 10 Lasagna Sheets, broken into pieces
  • 1 cup Mozzarella Cheese, shredded

Directions

  1. In a large pot brown sausage, beef, and onion. Drain excess grease
  2. Add seasonings
  3. Add Pasta Sauce and Chicken Broth. Stir. Bring to gentle boil.
  4. Add broken Lasagna Noodles. Cook until tender, stirring occasionally
  5. Stir in Ricotta Cheese. Simmer until fully incorporated & creamy.
  6. Ladle into bowls, topping with shredded Mozzarella Cheese

Notes:

  • Add more seasonings (all) – you cannot over season
  • Add a little bit of salt. There’s not enough in the Pasta Sauce or Broth. But you don’t need a ton.
  • I used Rao sauce, which tasted pretty fresh
  • Preparing ahead of time and letting sit helps the flavors come together
  • Serve with Garlic Bread 😋
